One of my favorite places to shop for food is Trader Joe’s. It’s such a happy place! Not only do they have delicious gourmet food at reasonable prices, but the experience is great too! The store layout is easy to navigate and the employees there are into food and eager to talk about it! They’ll even open something for you to let you taste it! And at the checkout, the cashiers are interested in what you’re buying. More than once, they’ve said to me, “this is really good- have you tried it yet?” about something I was buying. View Post

Rachael Ray Mac n Cheese Recipe Review

When I got my hands on Rachael Ray’s 365: No Repeats cookbook, I couldn’t wait to try her mac-n-cheese recipes. In this book, she provides a master recipe and then makes modifications where you swap out ingredients using the same basic recipe. My favorites are the Mac-n-Cheddar with Broccoli (the master recipe) and the Mac-n-Smoked gouda with Cauliflower. View Post

Recipe | Lighter Italian Meatloaf

When I’m in the mood for comfort food, but don’t want the extra calories, I turn to this lightened-up version of meatloaf. I found this recipe in Cooking Light and then revamped it to the recipe I used here. I usually serve this with mashed potatoes (just use the mashed potato recipe of your choice!) and a vegetable to keep it healthy and balanced.
