Rachael Ray Mac n Cheese Recipe Review

Rachael-Ray-Mac-and-Cheese-Recipe-Review-ShaneeJudee-1One of my favorite foods on the planet is macaroni and cheese. I’ve loved this dish ever since I was little! When I got my hands on Rachael Ray’s 365: No Repeats cookbook, I couldn’t wait to try her mac-n-cheese recipes. In this book, she provides a master recipe and then makes modifications where you swap out ingredients using the same basic recipe. My favorites are the Mac-n-Cheddar with Broccoli (the master recipe) and the Mac-n-Smoked gouda with Cauliflower.

Both are so easy to make! The Mac-n-Smoked Gouda with Cauliflower recipe is nearly identical to the master recipe. Just swap out the broccoli for cauliflower and the cheddar for gouda. Since I’m not a fan of smoked gouda, I just used regular gouda and it was delicious! The cauliflower version also calls for chopped almonds when serving.

Another modification I made to both recipes is that I used 2% milk instead of whole milk. I usually do this unless a recipe specifically states that you must use whole milk.

Both of these recipes are delicious and are sure to please your whole family. I also love the 365: No Repeats cookbook. You can make something different every night if you want to! If you did, your family wouldn’t get tired of anything, although they might ask for an encore of their favorites!
